Eddie Rockets – High Protein Low Carbohydrate

I treated my mother to lunch today in Eddie Rockets in Blanchardstown today.

Guess what – they have  high protein, low carbohydrates options on the menu!

I chose a burger in a bowl which was served with the fantastic “Special Sauce” (it also came with cheese).  I switched out a Honey & Mustard dressing for the salad with a garlic sauce.

Goodbye Body Fat!

We were at UCD this morning for the final visit of the Twin Nutrition Study that we were part of.

The good news that our final result for body fat was a less than when we started out.  Mine is down 1.5% in total while Amy is down 1% in total.  Not bad for 6 weeks!

The decrease in our body fat shows us that LCHF works.  There will be a slow and steady loss and we can only imagine how much lower our fat will be in a year’s time!

Just to let you all know our sugar cravings are well and truly gone.  We both have stopped eating sweets, crisps, chocolate, etc.  We feel so good about this!

LCHF Shopping in Lidl

Lidl is a discount German supermarket that came to Ireland about 15 years ago (someone can correct me on this!) at about the same time as Aldi. Since then both of these supermarkets have proliferated and are in most Irish towns – with some small villages even having both of them!

In Ranelagh there is only Aldi while a short stroll away in Rathmines there is both a Lidl and Aldi.  This morning after taking the dog for a walk I called to the post office to pay a few bills and buy Christmas Card stamps and afterwards I stopped off at Lidl to buy a few items.

For breakfast I bought eggs and bacon (when I got home I made scrambled eggs with butter and had 2 rashers along with the egg).  I also had a coffee with double cream in it.

The cream is a very reasonable price in Lidl and even better priced is their chocolate which they have very dark varieties of – I bought 81% this morning.  It’s dark and bitter and goes perfectly with a glass of wine or as a late night treat when you are watching TV and want something to nibble on.

The final item I bought in Liidl was the Greek style yoghurt.  It has some carbs in it (5g in 100g) but I add cream to it to increase my fat consumption when I eat it for lunch.

All of the above food cost a total of €10.23 and as you can see Lidl is the prefect place to supplement your Low Carb High Fat shopping!

A quick dinner – for when you are hungry!

Sometimes you are tired and hungry coming home from work and you just need FOOD.  This for me used to be the dangerzone because I’d come home and poke in the fridge, find some chocolate (appetiser!) and have a bowl of cereal for mains.

 

Whereas now, I find LCHF just so easy….for example this evening, a cold, dark, Irish evening and as above I was hungry (unusual it must be said when following a LCHF lifestyle) so I whipped up something lovely creamy, cheesy and fatty.

I had some ready made chicken (shredded chicken) in a packet in the fridge.  I threw that in a pot with some cream.

I quickly grated some parmesan cheese and melted it into the cream on a low heat.

 

Finally I lightly whisked an egg in a mug with a fork, and threw it in to the mix at the very end to thicken it all up – be careful, take it off the heat – you don’t want to get scrambled eggs!

High Fat Snacks

Here’s a handy go-to guide of what we eat as LCHF snacks

1. Greek yoghurt with added double cream

2. Half an avocado stuffed with cream cheese

3. Scrambled eggs made with butter (Of course we use Kerrygold because we are Irish!)

4.  Coffee with double cream and butter

5. Macademia Nuts

6. Almond Butter

7. Fat bombs

8.  Bowl of whipped cream with  a few chopped strawberries (if craving dessert)

9. Mascarpone cheese

10.  Cream cheese stuffed smoked salmon

And of course bacon and cheese!!

It seems to be in work that we mainly have issues on what to eat when looking for a small snack (at home you can just raid the fridge!)

We tend to eat Greek yoghurt in work with added double cream and sometimes a few nuts.  A cube of cheese is always a good option and then the ultimate hunger slayer is a cup of “Magic Coffee” – Coffee, double cream and butter – Delicious!

Perfect Poached Eggs

There are a number of foods you will find invaluable as part of your LCHF lifestyle.  Eggs being one of them!
I love eggs because they are so versatile – boil them and take them into work for lunch, scramble for a quick breakfast, use as a thickener with cream and parmesan cheese for an easy white (cheese) sauce) and finally for an opulent weekend breakfast.brunch there is nothing like poached eggs.
Poached eggs however, is something I struggled with for years and years.  My poaching tends to end up with straggly raggy (ugly!) eggs with half the whites left in the pan.  That is until I found out about the clingfilm method.
Place clingfilm across ramekin

Add salt, pepper and two/three drops of oil to the clingfilm.  The oil is essential – to stop the egg sticking to the clingfilm
Gather clingfilm upwards and form a “basket”.

Get rid of all air and twist the clingfilm to form little ball of egg.
Place into pan (I use a wok!) of boiling water.

Set your timer for 4 minutes
Result: Two perfectly formed poached eggs.  I have shown one upwards and one downwards on the plate here.

NB.
This recipe is just for the poached eggs.  As part of your LCHF diet you now need to add some fat!
I suggest:
A big lump of butter on each
Benedict sauce
Cream cheese and chives
Grated cheddar cheese
